Holly caught up with the charming Barry O’Callaghan recently to hear about his exquisite collection of 5 star boutique hotels in Ireland – CLIFF. Owner of CLIFF and Chairman of Rise Global, Barry is renowned as one of Ireland’s finest visionary and creative minds in the world of education and his love of Ireland and in particular Ardmore in County Waterford, is very apparent in each of his unique hotel offerings.
CLIFF is made up of 4 properties : The Cliff House, Cliff Townhouse, Cliff at Lyons and his latest endeavour, the stunning private residence, Cliff Beach House, which perches perfectly on the cliff above the The Cliff House in Ardmore Bay, arguably one of the prettiest fishing villages in Ireland.
What is evident in each of the CLIFF properties is their sense of place, each are reflective of the community they are in and blend a mix of heritage and history with a contemporary flair. Barry is very proud to have 2 Michelin Star restaurants in the group; ‘Aimsir’ holds a two star at Cliff at Lyons plus the ‘House Restaurant’ at the Cliff House in Ardmore, but hastens to add that while these are inspired culinary experiences, dining options are counter balanced with the more traditional bar menus and pints of Guinness, that visitors also expect on a trip to Ireland.
